Default Dolby Digital

Dolby Digital, or AC-3, is the common version containing 6 total channels of sound, with 5 channels for normal-range speakers (Right front, Center, Left Front, Right Rear and Left Rear) and one channel for the LFE, or subwoofer. The Dolby Digital format supports Mono and Stereo usages as well.

6.0 really just ads a rear center speaker. They have a pretty good explanation on this web site: http://www.ecoustics.com/avrev/surround/

A standard for high-quality digital audio that is used for the sound portion of video stored in digital format, especially videos stored on DVD-ROMs. Dolby Digital delivers 6 channels in the 5.1 configuration: left, right, and center screen channels, separate left and right sounds, and a subwoofer channel. This is sometimes called surround sound or 3D sound. It is a technology updation version of 5.1 and 6.0.
