Default Stereophonic sound

Stereophonic sound, commonly called stereo, is the reproduction of sound, using two independent audio channels, through a pair of widely separated speaker systems, in such a way as to create a pleasant and natural impression of sound heard from various directions as in natural hearing. It is often opposed to mono, where audio is in the form of one channel, often centered in the sound field.

So then technically a dolby system is not considered stereo?

Stereo, is the reproduction of sound, using more than one independent audio channels, through a symmetrical configuration of loudspeakers, to create a pleasant and natural impression of sound heard from various directions as in natural hearing. Dolby system is a noise reduction system, across most of the audio spectrum. The audio spectrum is split into four bands and then each is compressed but only the quieter portions and then expanded on playback

In simpler terms , the wavelength of a stereo sound is much bigger then the wavelength of a monophonic sound. Hence it makes the sound more appealing to our ears.
